Glucerna® Challenge Me for Diabetics


Diabetes is a very common word, but do you actually understand what is diabetes? Thanks to the Butterfly Project, I was invited to Glucerna® Challenge Me blogger event last month where I get to know more about diabetes and how Glucerna® Challenge Me program incorporating the new product, Glucerna, can help diabetics to manage their condition better.


Glucerna® Challenge Me is a specially designed program for people with diabetes to learn simple techniques to help them manage their diabetes with a healthy lifestyle. It helps to address three important components of managing their condition - managing blood sugar level, supporting weight management and reducing cholesterol as part of an overall diabetes management plan.

This 12-week program features a robust set of online tools and resources to provide people with diabetes with:
  • easy meal plans and recipes
  • guides on how to incorporate Glucerna into their healthy diet
  • daily exercise plans through step-by-step instructions


Glucerna is a diabetes nutrition product which provides a unique system of ingredients to help patients manage their blood glucose levels, weight and cholesterol. It can help reduce weight when used as part of an overall diabetes management plan. Best part is it can be added into any kind of food or beverages and we're so honored to have Ms. Suraiya to teach us how to bake cupcakes infused with Glucerna. (Y)


So here's the secret recipe of making Glucerna Hokkaido pandan cupcake with panda custard cream filling of 20 servings (credits to Glucerna):

INGREDIENTS
QUANTITY
Batter
Ingredient A

Egg yolks
2
Glucerna®
120ml
Vegetable oil
100ml
Few drops  Pandan essence

Ingredient B
4 tbsp
Cake flour
140g
Glucerna® powder
3 scoops
Baking powder
1 tsp
Ingredient A

Egg white

Sugar

Pandan Custard Cream Filling

Glucerna®
250ml
Custard powder
20g
Few drops Pandan essence

Dairy whipping cream, whipped
200g


First you need to mix all ingredient A to smooth paste in order to make the cupcake batter.


Sift ingredient B and add this into ingredient A mixture. Stir and make sure it combine well.


In a separate clean bowl, whisk the egg white to stiff foam, add in sugar gradually and continue to whisk until a stiff peak form. Fold the egg white form into the batter in 2-3 times and mix lightly until egg white is cooperated with the batter.


Then you can pour the batter into the cupcake moulds until 80% full.


Bake the cupcakes in a pre-heated oven at 170C for 15-20 minutes.


In the meanwhile, you can start preparing for the pandan custard cream filling. To make the filling, you need to first dissolve custard powder with Glucerna then cook the mixture to a thick consistency at low heat. Add in pandan essence then let the custard cool completely before fold in the whipped cream. When the cupcake is done, make a small hole at the middle and pipe in the filling and you're done! Easy peasy, isn't it? Now diabetics can have delicious cupcakes too! :D

Note: It is best to chill the filled cupcakes overnight before serving straight from the cup with a spoon.


Apart from learning how to bake delicious cupcakes which is suitable for diabetics, we also get to decorate our very own cupcakes with fresh fruits. Yummm!

In the process of baking











CNY is coming! I am really excited and can't wait for this because I can get big angpaus, wear new clothes and have a real bonding sessions with my relatives and friends wooo  In preparations for the festival, I spent half of the day helping mummy to make chocolate almond cookies. Do the cookies look yummy? It also smell nice and taste like heaven okay heehe! *drooooling* Gotta off to bed nao, share with me your cny preparations too! :)

Fried Oreooo!

Yeah, it's fried oreo! Credits to Carmen, I had this super awesome dishes for tea time yesterday. I missed out the dessert night at Carmen's house last Saturday so I've decided to make it myself heh. Fyi, Imma oreo freak :P I always wanted to bake a oreo cake but I'm such a lazy bum, you know. ): But now I can replaced it with fried oreo whenever I'm craving for it (: YAY

According to Carmen, it's actually damn easy to make fried oreo. Just follow the steps below (:

Firstly, what you need is flour.


Then, add some water and a pinch of salt into the flour and stir it together.


Until it becomes like this. (:

Then, take out the oreos and put it into the flour made. Make sure it's thick enough before you put it into the pot.

Oreos! But I think I've brought the wrong brand. ): It's Jack n' Jill one.

Heat up the pot and you have to put quite some amount of oil in it. Then, deep fry the oreos until it becomes golden brown colour.

TADAH! And it's done :D

Yeah, I know it doesn't looks good but it tastes yummeh :D

Oh, the taste is like.. fried ice cream I would say (: Crispy but soft like ice cream inside awww.
You can rarely see me walking in kitchen and cook except for something that I'm interested in and I would like to try it out myself. (: Shh but still, 3 thumbs up and 2 thumbs down ): Because it's unhealthy and fattening awww. Anyway it's kind of dessert that you should really try out (:

YuhJiun's version of pizza hut!

Hi cupcakes! Look at my title, and you may get what am I going to say. Still don't get it? Look at it twice, the third time, the fourth time... GOTCHA! Alright, I'm just fooling *it's not funneh at all* ._.

Do you guys remember that Eunice has posted a post about her homemade pizza? And here is mine, my own version of pizza *dang!*

I am so lazy to say about its procedure, so let's the pictures guide you now. :)

After that, prepare two breads and put the sausages and ham on it. And not forgotten, cheese too! If you're a cheese lover, you can put more on it :) And then put it into oven and bake it around 10 mins. And.. TADAH!

AT LAST :D

I've tried it twice and the second time i put double cheese, double ham and double sausages! And it tastes so scrumptious babe *nom nom nom* :D Alright, I am lazy so I put only ham, sausages and cheese on it. You can put whatever you like too :) So, get up make your own version of pizza nao!
